tonight's dinner... talapia with mushroom and olive sauce...

put the green beans in a seperate skillet with olive oil and add some garlic....

veggies..... lookin' crisp and fresh...

add the onions to the skillet with olive oil...

add the garlic...

saute the onions and garlic....

added the diced tomatoes....

added the mushrooms...

added the olives...

i just added the talapia to the bottom of the pan and covered it with the sauce...

sauteed green beans in olive with garlic...

fresh salad with lettuce from our garden..

and there you go.... talapia with mushroom and olive sauce.... and green beans sauteed with garlic and olive oil.... served with a yummy garden salad with lettuce from our garden... YUMMY!

a yummy dinner we had last week...

it's dinner time... spanish rice with asian chicken....

first you saute the sofrito with diced up ham.. i did not have ham so i used just the sofrito

once you do that for a while, you add the other ingredients, gandules, water, rice, olives, salchichas if you want...

close up of the gandules... they are yummy raw too... well, not really YUMMY... but i snacked on a few and they were good...

mix it up...

add the sazon and adobo...

and kaboom, you have your rice and beans and chicken dinner... looks yummy no?

add a few biscuits and you honestly feel like you're in heaven...

tonight's dinner.....

teriyaki and garlic encrusted salmon on a bed of garlic and herb rice with a splash of lemon....

marinate your salmon pieces for approximately an hour in the fridge... the concoction would consist of soy sauce, sugar and garlic... and then let it sit on the counter for an hour to become room temp and then cook like you would any other fish... and serve with rice...

this weekend was good.. spent friday night going out to eat to the Texas Roadhouse with other couples, katrice and tony and dan and kristen... the food was excellent...

i got a t-bone steak and it was melting in my mouth.... the place was slamming with people so you KNOW the food is good....
